My favorite pairing with the Brut Classique Rosé is raw fish and more generally Asian food like sushi. The freshness of the wine perfectly balances the flavors, even when the food is a bit spicy.

Meet the winemaker - Françoise Gazeau
If you’re looking for delicate sparkling wines with a fresh bit of French elegance and finesse, Françoise is your match. “I like to keep a beautiful acidity in all my wines," she says. "I'm also convinced that it's important to give wines time. That’s what makes bubbles so luscious and complex."
A 6th generation winemaker from Limoux – an ancient provence in the southern Languedoc famous for sparkling wines like Crémant de Limoux – Françoise is proud to carry her family's winemaking traditions – but she has a bigger vision in mind...
"I dream about Limoux becoming the best sparkling wine appellation in the world," she says excitedly. "And Angels will make that happen!"
