Born and raised in Left Bank Bordeaux - bringing you Médoc
A Médoc native in the iconic Left Bank of Bordeaux, Jérôme has been making wine since 1998. He grew up surrounded by viticulture and winemaking at his family’s estate – Château du Moulin Neuf.
He had classic French wine training before interning in Australia – where he studied winemaking in extreme weather conditions. That proved perfect for his return to Château du Moulin Neuf, where he assumed leadership – and learned to expertly adapt to the temperamental climate of Bordeaux.
Jérôme’s roots in the Médoc run deep – from birth until now – so there’s no better winemaker to share with Angels what makes this Left Bank Bordeaux region special.
Jérôme Bibey's Story
Jérôme was born in Médoc, the iconic Left Bank of Bordeaux, where he grew up in the family’s vineyard estate – Château du Moulin Neuf – so he’s local through and through.
He had classic French wine training before interning in Australia – where he studied winemaking in extreme weather conditions. When he returned to Médoc, he took over the leadership of Château du Moulin Neuf. He was always close to nature and the vineyards during his youth, so becoming the family’s next-generation winemaker was a natural fit.
What makes Jérôme’s wine unique is his lifelong determination to make wine at Château du Moulin Neuf, in spite of nature’s challenges. He has come to accept the unpredictability of weather and climate and works hand-in-hand with nature, instead of submitting to her whims. “Nature is in charge – you only take what she wants to give you. This is why it is essential to stay in tune with her every day.”
Jérôme also employs a variety of winemaking techniques to ensure complexity. “Making wine is similar to cooking. Sometimes you need to add some spices or salt to reveal a dish. As I am a gourmet chef, I very much appreciate the ‘cooking’ of wine,” he shared.
Jérôme’s most memorable vintage to date was 2011. There was a big hail storm that could have ruined everything, but he didn’t give up. He worked even harder to craft the best wine possible from this unexpected storm – quickly adapting his winemaking process throughout fermentation and aging – making last-minute blending decisions up until 2 days before bottling. Jérôme’s attention to every detail was not in vain – Château du Moulin Neuf Médoc won the Crus Bourgeois cup with that vintage.
Jérôme is thrilled to be a part of the Naked Wines Angel community. “My wine tells a story about a place, its terroir and me. I can’t wait for Angels to taste my story.”
