Best before
Sauvignon Blanc in general and this bottle in particular will not benefit from extended aging. The lively fruit will remain for several months but this will be best-enjoyed over the next 12 months - just in time for the next vintage. If you do choose to cellar be sure to store in a cool, dark place. We choose a lightly tinted bottle to showcase the beautiful pale color of the wine but the wine does need to be protected from sunlight if stored for several months.
Serving advice
Cool in an ice bucket or in the refrigerator prior to serving to best showcase the zesty fruit and bright aromatics. This crisp, fresh Sauvignon Blanc will be most pleasing just above refrigerator temperature. We chose to seal this bottle with a screwcap both for easy accessibility and freshness, simply crack the cap, twist and pour - no need to aerate or decant. Replacing the screwcap and returning to the refrigerator will keep the wine fresh for a few days after opening. The bottle will not leak and will fit back in the space from which it originally came. Take this wine along with you anywhere it is allowed - no need for a corkscrew.
Food match
Rock shrimp tossed with a poblano chili and lemon 'vinagrette' served in chilled martini glass and topped with shaved red bell peppers. Or keep it simple with a tray of Oysters from Tomales Bay and a waterfront table at Nick's Cove - a quick and easy recipe for happiness.

Meet the winemaker - Ondine Chattan
Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
Ondine is awestruck by the wine community Angels have built – and she wants to help it grow. “I truly connect to people through the wines I make,” she said. “The stories of the growers, the vineyards, and the process behind the wine are as vital to me as grapes.”
