It's done all the aging it needs in barrel - it's ready to drink now.
Serving advice
Like other wood aged fortified wines, once opened the wine will not spoil (due to the higher alcohol level in the wine acting as a preservative), and can be drunk over a couple of months (but who's going to do that anyway?!)
During the cooler months, I like to serve this Topaque at room temperature, but enjoy it directly from the fridge or even the freezer during the summer.
Food match
Dessert! Honey and ginger tea cake, sticky date pudding, or homemade donuts... while listening to David Bowie's "Golden Years" of course!

Jen grew up in a winemaking family and has been sipping legendary Australian wines from an early age. She's been able to travel widely and honed her craft with some of the best names in the business in France and Portugal before coming home to Australia
