About the wine
This bright, fruity, limited-release Chardonnay is here for a good time, not a long time
This show-stealing Chardonnay practically sings with a flavor ensemble of golden apple, pear, zings of lemon and even a touch of oaky creaminess to balance out a bright, tart finish so scrumptious you just have to taste it to believe it.
Angel funding gave Ondine the once-in-a-lifetime shot to scoop up the cream of the Chardonnay crop in Russian River Valley, from an acclaimed vineyard and grapegrowers she knows personally – and bring it to you for an unbelievable $9.99!
Ondine calls this “the perfect gathering wine” – whether you’re passing it around at a party, or pairing it with a big, fancy charcuterie spread split between friends, it’s the perfect high-class sipper for every occasion.
Best before
This Chardonnay has a lovely acidity, reflective of the vintage which is indicative that it has potential to age nicely, however, all the vibrant pome fruit (apple, pear, quince) will show at its best in the wine's youth. Ideal consumption will be in the first year after purchase and the bright aromatics should hold for at least 18 months. With extended aging expect the palate to broaden a bit and the fruit to evolve from fresh and crisp to reflect more baked and nuttiness. I do believe it will best reward within two years of purchase.
Serving advice
Open, pour, and enjoy. There is no benefit from aeration or decanting of this wine prior to serving. A great swirl in the globe of the glass once poured will allow the esters to volatilize and fill the glass' headspace with the bouquet.
Food match
It may sound cliche but a triple creme Brie is the perfect match to this chardonnay. Accompanied by a handful of toasted but not oiled Marcona almonds the more nutty/savory components of the wine will be revealed. For an entree, clams or mussels steamed with butter, white wine (Chardonnay perhaps?), a twist of lemon, and parsley served over fresh egg noodle pasta would be divine. This crisp, understated style of Chardonnay would also be particularly well-suited to lighter curry-scented dishes such as cold chicken curry salad with slivered almonds and golden raisins.

Meet the winemaker - Ondine Chattan
Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
Ondine is awestruck by the wine community Angels have built – and she wants to help it grow. “I truly connect to people through the wines I make,” she said. “The stories of the growers, the vineyards, and the process behind the wine are as vital to me as grapes.”
