Top-shelf bubbles from the queen of sparkling
- Flourishes of floral aromas and citrus tease the way into light tropical flavors and tastes of green apple that glide through the fine bubbles with a smoothness that’ll keep you coming back for sip after juicy sip.
- Sourcing grapes from primo North Coast vineyards, Penelope aged this wine for 2 years to bring out tons of smoothness and carefully refined bubbles. This is as top-shelf as California bubbly gets and it's yours for only a fraction of its worth.
- These well-aged, balanced bubbles are ready to pour on arrival, but feel free to put them away for a celebration too – Penelope says they’ll be perfect either way! Just chill a bottle slightly and you’re good to go!
Best before
I am not a big believer in aging bubbles. This is being bottled because it is ready. If you have to for a special occasion, this will certainly still be a winner.
Serving advice
Chill in refrigerator - bring out about 30 minutes before opening in the winter time, about 15 minutes if it is warmer. Over-chilled, the beauty of this wine will be masked. And remember, there is a lot of pressure in the bottle - hold the cork in, twist from the bottom and slowly guide the cork out. This will help to conserve the bubbles and that's what we are here for!

Meet the winemaker - Penelope Gadd-Coster
If it's famous and fizzy, chances are Penelope's the talent behind it. Having worked with iconic California sparkling houses like Schramsberg, Mumm and J Vineyards & Winery, she’s made hundreds of premier bubbles over the years.
Discretion is key. When you work with prestigious sparkling houses like she does, you keep the name dropping to a minimum. But it's fair to say her talent has influenced the famous sparkling you know and love.
With 30+ years of winemaking under her belt, Penelope is a sparkling wine expert. Now thanks to you and her friends at Breathless (a female-led Healdsburg winery), she’s making her own sparkling for the very first time!
