Best before
Once disgorged, I like to wait at least 6 months for the dosage to marry with the wine. A well made sparkling wine can age for many years in a controlled cool environment.
Serving advice
Never point the cork at anybody while opening. Once the wire hood is unwound, always keep your hand on the cork. If the cork breaks during opening, never use a corkscrew as this may cause the bottle to explode.

I enjoy oysters, appetizers featuring a salty main ingredient like prosciutto, sun-dried tomatoes, sushi, milder cheeses, grilled, sautéed or poached white fish like as sole, halibut and sea bass with this Brut.

Rob’s had a hand in Napa’s sparkling wine game since its infancy, getting his boots wet at Chappellet and Schramsberg and later leading teams for Scharffenberger, Piper-Sonoma and Mumm. That's quite the pedigree!
