About the wine
Sam is a master of craft and his latest is blending Shiraz's best qualities.
- To get the beautiful red fruit and ripe cherry flavors he loves, Sam harvests his Shiraz quite ripe. "I pick it when the skin is starting to soften and even pucker up a little...when the tannins have a plushness, and very little bitterness."
- This is a deep red wine, full of bright fruit and spicy oak. You can hold onto it for a couple of years to develop savory earth flavors, but according to Sam, "true Australian Shiraz is most delicious when it's relatively young."
- Thanks to Angels, Sam is able to blend this Shiraz from unique vineyards throughout Australia. Sam says it's "the blending that gives this wine its length of flavor, and attractive, juicy palate." Being made by an incredibly talented winemaker doesn't hurt.
Best before
I really like the fruit forward (red fruits, and cherries with spicy oak note) character of this wine, and think it is a great drink now, and over the next year or two. I know some people will like to give it more time to age and develop savory earth flavors, but for me it's most delicious when relatively young.
Serving advice
No need to decant, but if you can I think it tastes best a little cooler than room temperature - say 60 -65°F.
Food match
This is a pretty versatile red and will match with most red meat dishes. Only thing I would avoid is chillies which will seems to dial up the heat on alcohol!
