About the wine
Sam is a master of craft - he's perfected Aussie Shiraz
- To get the beautiful fresh cherry taste he loves, Sam harvests this Shiraz quite ripe. "I pick it when the skin is starting to soften and pucker up... and the pips are totally brown."
- This wine is youthful and juicy, full of bright fruit and spicy oak. You can hold into it for 2 years to develop more earthy flavors, but according to Sam, "it's a great drink now!"
- Thanks to Angels, Sam is able to blend this Shiraz from unique vineyards throughout Australia. It's really Angels support that makes this Shiraz SO good!
Best before
I like the youthful freshness and fruit forward characters of this wine. I think it is a great drink now. I know some people will like to give it more time to age (2-4 years) to develop savory earthy flavors, but for me it's most delicious when relatively young.
Serving advice
No need to decant, but if you can I think it tastes best a little cooler than room temperature, 60-65 F.
Food match
This is a versatile red and will match with most red meat dishes. At home we drink it with spaghetti Bolognese, or ragu which is a favorite of our 12 year old son (the ragu, not the Shiraz!)
